Fluid Ounces vs. Dry Ounces: The $100 Baking Mistake Explained

If you have ever baked a cake that turned out unpleasantly dry, dense, or rubbery despite following the recipe to the letter, there is a 90% chance you confused fluid ounces with weight ounces.
In the United States imperial measurement system, the word "ounce" is unfortunately used for two completely distinct physical quantities: Fluid Ounces (a unit of volume: 29.57 milliliters) and Avoirdupois Ounces (a unit of mass/weight: 28.35 grams).
Water is close enough to cause confusion, but the units are still not equal: 1 US fluid ounce of water has a mass of about 1.04 avoirdupois ounces. A cup of water (8 fluid ounces) has a mass of about 8.34 ounces (roughly 236–237 grams, depending on temperature). Dry goods vary much more because of density and packing.
For example, 1 cup of sifted all-purpose flour weighs only 125 grams (4.4 oz). If you see a recipe calling for "8 oz of flour" and you fill a 1-cup liquid glass pitcher up to the 8 oz mark, you are actually adding nearly 1.8 cups of flour—almost double what the recipe intended!
Always use a digital scale for baking ingredients, especially flour, cocoa powder, sugar, and butter. A $15 scale will elevate your baking consistency more than any expensive stand mixer ever could.
